As Tomb-sweeping Day is coming, the traditional food ----Qinming Dumpling again wins its popularity. It is a kind of Chinese food of Han ethic group, which is used among Tomb- Sweeping Day, also called Qingming Festival.
It is as green as jade, as soft as cotton and as sweet as candy. It is also called Qinming Momo, which belongs to the category of traditional food of Jiangnan District in China. Huangyan Distric in Taizhou, Zhejiang has the best way of making Qinming Dumplings. The history of eating Qingming Dumplings among Qingming Festival has been lasting for thousands of years.
The local people always pick the wild plant called "Mianqing" and deal with it in a way that they get rid of its root and keep the most tender leaves. Then they dry the leaves in the sun and then grind them into powder, called "Mianqing" powder. Next, they mix the powder with the rice flour, using the spring water to knead them as the skin of the dumpling. The filling is made of bamboo shoot and meat with scallion pieces, salt, yellow rice wine, white sugar, gourmet powder and soy sauce. The dumplings are shaped into oblateness. When they are steamed, a mustard leaf is put below them.
Nowadays, the Qingming Festival dumplings has developed into different flavors. The filling, exept being salt, can also be sweet. The bean-paste filling is also used.
With more flavors, the Qingming Festival dumplings has becomed more and more popular and has met more people's satisfaction and taste.
